In the Kitchen with The Vegan Peach-- Tofu Salad Sandwich


 I was always a fan of egg salad sandwiches before going vegan, so I can say with certainty that tofu salad is just as delicious, filling and you don't have to worry about any chickens being tortured in the process. This is my version of the recipe, it's simple, inexpensive and delicious and you don't need a lot of ingredients.

Ingredients:
1 block of firm or extra firm tofu
1/2 cup of vegan mayo (my choice is Vegenaise)
1 to 2 teaspoons of mustard
1 to 3 tablespoons of nutritional yeast
Sprinkle or salt and pepper

Optional-- chives, celery, spinach, scallions or any other veggie you like

I also sometimes add a sprinkle of lemon juice, soy sauce or relish. It all depends on your tastes, so be creative and jazz it up! :)


 Use a food processor or simply mash the tofu by hand. I pulse the food processor because you still want that egg consistency. In a medium bowl mix all the other ingredients together, then simply add your tofu. Mix until it is evenly spread. Use your favourite bread or buns to enjoy.
